Single Malt Whisky - DEW 002

DEW002 RELEASE DATE: 1 NOVEMBER 2024
A very limited release, DEW002 is output of a single 20L Tawny barrel, aged for just over 2 years, and then finished in a Bourbon barrel for 1 month.

When first encountering this beautiful spirit on the nose, you will be led by sweet caramel and spice with subtle vanilla and wooded undertones of mulch and wine cellars. 

On your first sip, the palate is then blasted with zesty freshness and a smash of spice, which then morphs into Christmas pudding and clove flavours.  Dusty oak flavours find their way to the back of the palate

Your palate is left with a long lingering zesty spicyness and subtle sweetness and cigar boxyness that is satisfyingly good!. 

Bottled at 46% ABV, our second release is sweet and spicy, deliciously more-ish and excitingly drinkable.

Rich deep flavour notes of creme-caramel, spice and subtle vanilla and mulch.
Palate:
Traditional Tawny flavours of Christmas pudding, clove and cinnamon, with dusty oak.
Finish:
Sweet and spicy all the way.

    Copper is important to the taste of our whisky. It strips out the sulpher and returns a smooth new make spirit that is ready to be barrelled. This process is what makes Annie such an importnat part of our team.

    Oak is what turns the newly produced New Make Spirit into Whisky. We have carefully selected barrels, both Franch Oak and American Oak, from a range of sources to create a series of unique whiskies.

  • Pure Tasmanian Water

    Pure Tasmanian Water

    Tasmania has some of the purest water in the world. This is collected and stored onsite, ensuring this Tasmanian purity is included in our whisky.

  • Time

    Time

    Whisky maturation cannot be rushed - it just takes time. The art is knowing when the whisky will be ready. We will only bottle our whisky when it's ready, reagardless of how long it's been in the barrel.
